Cornbread Taco Bake
- 1 lb ground beef
- 1 (1 ounce) package taco seasoning
- 1/2 cup milk
- 1/2 can creamed corn
- 1 T chopped jalapenos
- 1T chili powder
- 1 egg
- 1/2 cup green pepper chopped
- 1/4 cup chopped onions
- 1 (8 ounce) can tomato sauce
- 1 package cornbread mix
- 1 (2 7/8 ounce) can French-fried onions (optional)
- 2/3 cup shredded cheddar cheese
- black olives (optional)
- In skillet, brown meat with onion and green pepper; drain.
- Stir in taco seasoning and tomato sauce
- Mix together cornbread mix, milk, egg, corn, jalapeno, chili powder and add black olives and half of the french fried onions if desired
- Pour 1/3 of cornbread in the bottom of pan
- Add the meat mixture to the pan
- Sprinkle half of the cheese over the meat
- Pour additional cornbread on top
- Bake uncovered at 400°F for 20 minutes.
- Top with cheese and french fried onions if desired.
- Bake 2-3 minutes longer.

This would be a hit in our house. I looked at the picture and realized it was mexican cornbread...thank goodness. For a second I was thinking of that sweet cornbread and that wouldn't work! :)
